Pesto Chicken Pasta

Compliments of Rusty Bucket – (Serves One)


  • 5 oz Chicken Breast, Grilled
  • 1 Tbl Pesto Oil
  • 1 Tbl Garlic Butter
  • 2 oz Mushrooms, sliced
  • 6 oz Roasted Tomatoes
  • 1 oz Fresh Spinach
  • 8 oz Spaghetti
  • 1 tsp Salt and Pepper
  • 1 ¼ Tbl Parmesan Cheese
  • 1 piece Garlic Bread



Over medium heat, melt garlic butter and sauté mushrooms until soft. Add roasted tomato sauce and bring to a simmer.

Meantime, cook pasta in water to taste and remove to drain. Add spinach to sauce and cooked until wilted. Add pasta to pan and toss with 1 tbl. Parmesan, salt and pepper.

Remove two pieces of tomato and reserve. Twirl pasta and place in pasta bowl. Pour remaining sauce over noodles, top with pesto chicken breast and place reserved tomatoes on chicken and garnish with 1/4 tbl parmesan. Serve with garlic bread.
