Cooking with Zucchini

We started off our morning with a little zucchini! We often don’t know what to do with this vegetable, but Catherine St. John from The Western Reserve School of Cooking showed Kristi two great recipes that use zucchini.

Healthy Back to School Lunches

Help your kid start off the school year off on the right foot by packing them healthy and delicious lunches! Katie Boyd, a registered Dietician at Giant Eagle brought a few easy examples in.

Katie’s Tips:

  • The best lunch is one your child will eat – and they are more likely to eat one they help shop for and pack.
  • Kid’s don’t like to bring containers home, so stock up on snack size baggies
  • Keep food safe, ask your child’s teacher if there is a refrigerator for their lunch and if not, buy an insulated bag and ice pack – don’t forget you can freeze yogurt, string cheese, and even grapes overnight before packing – by lunch they will be a chilled treat!
