Caramel Apple Bacon Tart Recipe

Tart Dough:

  • ½ cup cake flour
  • ½ cup all purpose flour
  • ¼ teaspoon salt
  • 3 oz. cold butter, cubed
  • 1 oz. cold cream cheese, cubed
  • 1 egg

 

In a food processor, pulse together flours and salt. Add butter and cream cheese and pulse mixture until it resembles coarse bread crumbs. Add egg and vanilla and pulse until incorporated. Turn dough out onto a piece of plastic wrap. Wrap dough in plastic wrap and chill in the refrigerator for 30 minutes.

Apple Filling:

  • 4 apples, peeled, cored, chopped
  • ½ cup brown sugar
  • ½ tablespoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon clove
  • 2 tablespoons butter
  • 2 tablespoons lemon juice
  • 1 cup water
  • 1/3 cup crumbled cooked bacon

 

Place all ingredients together in a saucepan and allow mixture to cook down until apples are soft. Allow mixture to cool. Place cooled mixture into a food processor and blend until the mixture is the consistency of smooth apple sauce. Fold in bacon. Spread mixture into chilled tart shell.

Apple Topping:

  • 3 apples, cored, peeled
  • 2 tablespoons butter, melted
  • 1 tablespoon sugar
  • ¼ cup crumbled cooked bacon
  • 1 recipe caramel sauce

 

Slice apples into thin wedges and arrange overlapping around the tart. Brush arranged apple slices with butter then sprinkle sugar on top. Bake tart in a 350 degree oven until apples are light golden and crust is golden brown. Remove tart from over and allow to cool.

Brush warmed caramel onto the tart to give apples a glossy finish. Drizzle on remaining caramel and sprinkle bacon pieces.

Caramel Sauce:

  • 2 cups granulated sugar
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 cup heavy cream

 

Use a larger pan than you think you will need as the mixture will bubble up when the cream is added. In a non-reactive saucepan, heat sugar, water and lemon juice. Allow mixture to melt and as cooking turn a golden caramel color. Pull sugar mixture off the heat and add heavy cream. Be careful as mixture will bubble violently. Mix in cream then add mixture bake on the stove and allow to thicken slightly.
