Hummingbird Cake

  • 3 cups all purpose flour
  • 2 cups sugar
  • 1tsp baking soda
  • 1tsp salt
  • 1tsp cinnamon
  • 3 large eggs beaten
  • 1 1/2 cup vegetable oil
  • 1 1/2 tsp vanilla extract
  • 2 cups chopped banana (3 or 4 depending on size)
  • 1 cup chopped pecans
  • 1  8ounce can crushed pineapple with the juice


In a large bowl combine flour, sugar, baking soda, salt and cinnamon.  In another bowl combine oil, eggs and vanilla.  Add to flour mixture and stir by hand gently, then add banana’s, pecans and pineapple with the juice.  Grease and flour 2-9 inch round baking pans, then divide batter into pans and bake in a preheated 350 degree oven for 35-40 minutes.  When done cool in pans on a cooling rack for 15 minutes, and then remove from pans and put back on cooling racks til completely cooled.



  • 8 oz package of cream cheese
  • 1 stick butter
  • 1 tsp pure vanilla extract
  • 1- 1lb box powdered sugar


Beat together cream cheese, butter and vanilla, slowly add powdered sugar.

Frost cake and refrigerate any leftovers.
