Cumin Scented Chicken w/Blue Cheese Tzatziki Sauce

  • ¼ cup cumin
  • 24 skewers (soaked in water overnight)
  • 2 lbs chicken breast cut into 1” pieces
  • 2 tbsp crushed garlic
  • 1 tbsp kosher salt
  • Cracked black pepper
  • Olive oil


  • 1 container crumbled blue cheese
  • 3 tbsp. olive oil
  • 1 tbsp. vinegar
  • 2 tbsp. minced garlic
  • ¼ tsp white pepper (if you have it)
  • 1 cup greek yogurt
  • 1 cup sour cream
  • 2 english cucumbers (peeled and diced)
  • 1 tsp. chopped fresh dill

Preheat oven to 465 degrees.

Combine all sauce ingredients into a food processor EXCEPT fresh dill and pulse on low for 30 seconds.  Place in a bowl, garnish with dill and refrigerate.

Assemble chicken on skewers and place on a foil covered cookie sheet that has been drizzled with olive oil (to create a non-stick surface).  Combine 4 tbsp of olive oil, pepper, kosher salt, garlic and cumin in a small bowl and drizzle the mixture over each chicken skewer. Bake for 20 minutes, and garnish with parsley flakes if desired once skewers are done.
