Val’s Salmon Pita Pocket Sandwich

1-1 1/2 pounds of salmon fillets
1 T butter
Dash salt
Dash pepper
1-1 1/2 T dill weed
Sandwich pita pockets (whole grain or wheat)
Olive oil mayo
Bag of mixed greens salad or butter lettuce salad
Large tomato

Steam salmon fillet in a tablespoon of butter. Add salt, pepper and dill. Cover and let cook for 4 to 5 minutes, depending on thickness of fillet, on medium heat. Turn heat off. Let stand.

Mix mayo in bowl with dill, squeeze of lemon and lemon zest. Spread mayo mixture in pita.

Place cooked salmon fillet in pita pocket. Dress with mixed greens and slice of tomato. Fold for a quick healthy meal that will keep you energized and on the go.
