- 2 Cups Bread Flour
- 2 Cups Granulated Sugar
- 1 Tsp Vanilla Extract
- 3 Cups Shredded Zucchini (seeds removed)
- 1 Tsp Salt
- 1 Tsp Baking Powder
- 1 Tsp Baking Soda
- ½ Cup Vegetable Oil
- ½ Cup Whole Eggs
- ½ Cup Sour Cream
- 1 Tsp Ground Cinnamon
- 1 Cup of finely ground Walnuts. ( Can also use Pecans or Chocolate Chips or Raisins)
Place everything in a mixing bowl at the same time.
Mix for 1 minute on low, then increase for 4 minutes on medium speed.
Portion mixture into greased baking loaf pans and bake for approximately 50-60 minutes
At 400 F. Check done with toothpick.
