Crockpot Potluck Pork Chops

Ingredients:

  • 4 thick pork chops (frozen or not)
  • 2 baking potatoes
  • 3 or 4 carrots peeled and cut into 2 inch pieces
  • ½ lb pearl onions
  • 1 jar salsa (12 or 16 oz)
  • ½ lb green beans
  • Salt and pepper to taste

 

Directions:

Peel potatoes and cut into thick slices (1/2 inch or so). Add 1 tbs vegetable oil to a hot skillet and brown potatoes.

Salt and pepper pork chops.

Begin to fill crockpot. Carrots, pork chops, 1/2 a jar of salsa, potatoes, onions and remaining salsa. Set slow cooker to high (6 hours).

Add green beans to slow cooker during the last 40 minutes.
