Fox 8 Recipe Box: Fried Turkey and Stuffing Waffles

CLEVELAND -  What to do with all those Thanksgiving leftovers? It's the question of the day. So if you're looking for something different, we've got a new twist on leftover turkey for you, courtesy of  Chef Katherine Horvath from Whole Foods Market in Rocky River.

Fried Turkey and Stuffing Waffles

Ingredients:

Stuffing Waffle:

4 cups of traditional sage stuffing

2 large, cage-free eggs

Non-stick spray

Turkey:

½ pound cooked turkey meat (preferably slices or medallions)

Flour mixture:

4 cups of all-purpose flour

2 TBS sea salt

1 TBS black pepper

2 tsp cayenne pepper

½ cup canola oil (for frying)

Batter:

8 large, cage-free eggs

1 quart of buttermilk

Cranberry Maple Syrup:

½ cup WFM cranberry apple conserve
1 cup 100% maple syrup

Hot sauce to taste

Directions:

Preheat waffle iron.  Mix together stuffing and two eggs. Set aside. In mixing bowl, combine flour, salt, black pepper and cayenne.  In separate mixing bowl, whisk together 8 eggs and buttermilk.   Dip turkey into egg mixture.  Transfer to flour mixture and coat well. Spray waffle iron with non-stick spray and evenly distribute stuffing mixture on iron.  Cook for approximately 6 minutes. Time will vary depending on waffle iron.  Heat oil in frying pan.  Place coated turkey in hot oil and cook until golden brown. In small pan heat cranberry apple conserve, maple syrup and hot sauce.  Place turkey on top of finished stuffing waffles and finish with cranberry maple sauce.
