Fox Recipe Box: Dante’s Pappardelle with Sausage and Peppers

AKRON, Ohio - Local restaurateur Dante Boccuzzi is the chef and owner of D.B.A. in Akron.  He along with other downtown Akron restaurant owners want to spread the word about a fun and delicious event happening the entire month of September in the Rubber City.

Dante shared a recipe for one of his favorite pasta dishes with Fox 8's Kristi Capel as he explained what the 'Downtown Akron Restaurant Tour' is all about.

Pappardelle with Sausage and Peppers

Ingredients:
3 T extra virgin olive oil
2 cloves minced garlic
½ yellow onions sliced
1 red bell peppers sliced
5 basil leaves
Salt and pepper to taste
1 jar of Dante Sausage Ragu Sauce
Ricotta Salata cheese

Method:
Heat the oil in a large pan over medium high heat. Saute the garlic, peppers, onions. Season with salt, pepper and cook until golden brown. Add the Dante Sausage Ragu Sauce. In a separate pot, bring salted water to a boil.

Add a little olive oil to the water. Cook the pappardelle noodles until cooked but firm to the bite. Add the noodles to the sausage ragu. Spoon the pasta into the bowl and grate the ricotta cheese over the top.
