Local comedian and Fox 8 funny guy Mike Polk Jr. is teaming up with Chef Bennett and Adams Reserve Cheddar in a series of special videos or web episodes that revolve around the cheese.

Kristi Capel attempted to learn how to make Chef Bennett's signature cheddar meatballs as she dodged jokes between the comedian and chef.
Chef Bennett's recipe is as follows:
Adams Reserve Cheddar Meatballs
Yields 20 2-ounce Meatballs
Prep time: 20 minutes Cook time: 20 minutes
1 cup onions, fine diced
2 tablespoons fresh garlic, fine chopped
3 tablespoons extra virgin olive oil
1 lb. ground beef chuck
1 lb. ground pork
2/3 cups Panko Bread Crumbs
½ teaspoon Italian Seasoning
½ teaspoon Fennel Seeds, crushed
2 tablespoons Fresh Parsley, chopped
1 cup Adams Reserve Cheddar, grated
2 tablespoons Kosher Salt
½ teaspoon fresh ground Black Pepper
-- In a sauté pan over medium-high heat, sauté the onions and garlic in the olive oil for about 2 minutes or until the onions turn translucent. Transfer the onion mix to a bowl and refrigerate and chill.
-- In another bowl combine all the remaining ingredients, including the chilled onion mixture and mix thoroughly. Using a scoop of your desired size, scoop the meatball mixture and round into shape, then place onto an oiled sheet pan. Roasted in a 400°F for about 10 to 15 minutes, depending on the size meatball you made. Serve while warm or chill and refrigerate for up to 3 days or freeze. These go great as an hors d'oeuvre or over your favorite pasta & sauce.
