Slumgullion (Irish Garden Stew)

Irish Garden Stew (Grandma Bowers Style)  



  •  2 cups Brussels sprouts halved
  • 2 cups carrots wide chunk or baby
  • 2 cups onion sliced
  • 2 cups diced celery
  • 5 large blonde bella potato peeled and diced large
  • 2 cups sliced mushrooms
  • 2 cups corn
  • 2 cups green beans cut into thirds
  • 2 cups broccoli florets
  • 5 smashed garlic cloves
  • 2 cups of chicken stock or broth
  • 2 tablespoons of season salt
  • 5 tablespoons of garden season
  • 2 sticks of butter



Mix all raw veggies in oven safe pan. Season with salt and Garden season. Mix in chicken stock and thin slice butter layer on top.

Cover and roast in oven at 300 for 30 to 35 min or until mid range soft.


In a separate pan….

Roast 5 to 7 pound top sirloin roast

Use your favorite rub or seasoning, press garlic into meat with bay leaf.

Cover and slow roast at 300   for 4 to five hours (this can be done days before).


Let cool, remove drippings, and cut into thumb size cubes. Place back into oven safe pan.


Place drippings in a stove top sauce pan and add  warm corn starch roue’

Whisk until it thickens and blend in plain yogurt until sauce has a body.


When done add sauce back to cubed sirloin and warm all to temp


Boil water for pasta. When water is at boil, add five tea bags and wait until water is tea like color remove tea bags. Add pasta until noodles are to your liking. Strain noodles and remove tea water. Put noodles into an ice bath in strainer. Add small amount of oil to keep them from sticking.


Layer noodles in pasta bowl, place roasted veggies on top and finish with sirlion cubes and sauce. Can top with a dollop of sour cream. Serve with soda bread and garnish.
