Fox 8 Recipe Box: Breakfast Snackers & Mexican Breakfast Burrito

Chef Robin Blair wants to help families get back on a healthy back-to-school routine and that includes sending your child off with a good solid (but easy to make) breakfast. Robin shared two of her favorite recipes with the Morning Show anchor team.

Mexican Breakfast Burritos
4 eggs, scrambled and cooked
3 whole wheat tortillas
½ pound sausage, cooked and crumbled
1/2 cup assorted veggies chopped, (onions, peppers, spinach, mushrooms)
½ cup shredded cheese
½ cup salsa

Cook eggs and sausage.
In tortillas, place sausage, eggs, cheese and veggies.
Top with a little salsa.
Wrap it up and enjoy!!!

 

Breakfast Snackers
4 eggs
½ cup milk
½ pound sausage, cooked and crumbled
1 cup assorted veggies chopped, (onions, peppers, spinach, mushrooms)
salt and pepper to taste
½ cup shredded cheese
Cooking Spray

Mix eggs, milk, salt and pepper
Spray a muffin tin with cooking spray.
Distribute meat and veggies between six cups.
Add egg mixture, distributing easily.
Top each snacker with cheese
Bake at 350 degrees for 20-25 minutes.  Until completely done.
Can be refrigerated for up to 2 days and reheated.

Salsa Verde
10 tomatillos, husked, rinsed and dried
¼ cup fresh cilantro chopped
Juice of ½ lime
1 small onion chopped
1 serrano pepper
salt and pepper to taste

Roast tomatillos on a cookie sheet at 400 for 10-15 minutes.
Allow to cool.
Blend all ingredients together in a blender and chill until serving
