BBQ Chicken Grilled Pizza
1 pound pizza dough cut into 4 or 8 pieces
1/4 cup flour (for kneading dough)
6 skinless chicken thighs, cooked and deboned
2 cups of your favorite barbecue sauce (I love Sweet Baby Ray's)
1 pound fresh mozzarella sliced
1/4 cup grated parmesan
Heat grill making sure half is hot and the other side has low heat.
In a pot heat chicken with your favorite barbecue sauce
Roll dough into balls with flour, and roll out flat with a rolling pin.
Place dough on hot side of grill. Allow to cook 2-3 minutes until you see hash marks. Flip over.
Sauce the cooked side of the dough. Add a few slices of mozzarella and some chicken.
Sprinkle with a little parmesan cheese.
Move the pizza over to the lower heat side and lower lid until the cheese is melted and dough is cooked through - 5-6 minutes.
