Scallop Watermelon Feta Appetizer

  • 1/2 pound scallops
  • 1 small watermelon
  • 1/2 pound feta cheese
  • Balsamic reduction sauce
  • 3-4 leaves fresh mint
  • 2-4 pats of butter
  • Dash of salt and pepper



In a hot skillet,  add the butter,  depending though on how many scallops you want to cook off.  Lightly season each side of the scallop with a little salt and pepper.

Sear slightly on each side of the scallop for approximately 1 minute until a nice golden brown.  Then flip the scallop and cook the other side for about another minute until a golden brown again.

Prior to cooking of the scallops,  take a small shot glass or round cookie cutter and cut out pieces of feta cheese and watermelon,  approximately the same size of your scallops, 1/2 inch thick only.

Now place the round feta cheese on a small plate, then stack on top the round piece of watermelon,  and finally the seared scallop on the top.  Drizzle some of the balsamic vinegar reduction.  Julienne finely some of the fresh mint and spread on top of the small dish of the scallop stack.
