FOX 8 Recipe Box: Truffled-Parmesan Tater Tots with Country Gravy

Truffled-Parmesan Tater-Tots is part of the Sunday brunch menu at Flour Restaurant in Moreland Hills.  Chef Matt Mytro shared his recipe for this tasty tater treat with Fox 8's Wayne Dawson.

Truffled-Parmesan Tater Tots

Ingredients:

  • 5 Idaho potatoes
  • 1/2 cup clarified butter
  • 3/4 cup parmesan cheese
  • 3 T chopped rosemary
  • 1 t crushed red peppers
  • 4 T truffle paste
  • 1/4 bottle truffle oil

 

Instructions:

  1. Cook potatoes in over at 350 degrees and cook for 30 minutes.
  2. Allow potatoes to cool for 14 minutes, but you want them still hot.
  3. Grate potatoes with skin on.
  4. Add all ingredients and mix.
  5. Season with salt and pepper and portion.

 

Country Gravy

Ingredients:

  • 1/2 pound butter
  • 1 cup all purpose flour
  • 2 quarts milk
  • salt and pepper to taste

 

Instructions:

  • In stainless steel pot make roux and whisk in milk.
  • Lower heat and cook for 15 minutes or until gravy consistency.
