Roasted Sweet Potatoes with Fresh Cranberry Glaze

(Serves: 4)

Ingredients:

  • 4 Sweet Potatoes, medium sized, peeled and cut into medium size cubes
  • 3 Tbsp. Olive Oil
  • Salt and Pepper

 

Directions:

Preheat oven to 350 degrees.  Place potatoes in a bowl and add oil, salt and pepper.  Toss to coat and place on sheet tray.  Put into oven and roast potatoes for 15 minutes until slightly tender. (Do not overcook as potatoes will go back in the oven).  While potatoes are cooking, make cranberry glaze. (recipe follows)  Remove potatoes from the oven and coat with cranberry glaze.  Return the potatoes to the oven to finish cooking for around 7-8 minutes more and potatoes are tender.  Remove from the oven and serve.

 

Fresh Cranberry Glaze

  • 1 Bag Fresh Cranberries
  • 16 Ounces Orange Juice
  • 2 tsp. Cinnamon
  • 2 tsp. Nutmeg
  • ¾ Cup Light Brown Sugar

 

Combine all ingredients in a small saucepan and begin cooing over medium heat.  Allow to simmer until cranberries burst open and sauce begins to thicken.  Adjust seasoning and sweetness to taste.
