Armenian Rice Pilaf
- 1/2 cup fine egg noodles (browned)
- 1/2 stick butter
- 1 cup long-grain rice
- 2 cups chicken broth
- salt and pepper to taste
Preheat oven to 350 degrees.
To brown egg noodles: Place noodles on a cookie sheet or jelly-roll type of baking pan and place in preheated oven. Watch closely because noodles brown quickly. Remove from oven and set aside.
Melt butter in a 2-qt oven safe saucepan.
Wash and drain rice.
Add rice and noodles to butter and saute for a couple of minutes.
Add broth and bring to a boil.
Cover and place in preheated oven for about 20 minutes or until all broth is absorbed and rice is cooked.
Season with salt and pepper.
