Jiffy Mix Corn Sopes
- 1 box Jiffy Cornbread Mix
- ¾ cup Milk
- 1 Egg
- 2 Tbs of Melted shortening or butter
- 2 Tbs Lime Juice
- 1 can drained corn with Jalapenos
Mix together in a medium bowl, do not over mix. Allow to stand at least 3 minutes.
While batter is resting, keep oil griddle or non-stick fry pan over medium-high heat. Surface will be hot enough that a droplet of water will bounce off heated surface.
Ladle ¼ cup or less of batter per pancake onto the griddle. When bubbles start to form and edges dry, flip to the other side. Pancakes should be golden brown.
To make Sopes, add any combination of toppings starting with re-fried beans, first.
