Broccoli, Spinach, and Feta Cheese Stuffed Chicken
- 2 cups broccoli
- 2 cups spinach
- 1/4 cup sun dried tomato
- 1/2 tbs olive oil
- 4 or 4 1/2 ounces Feta cheese, crumbled
- 2-3 cups yellow rice
- 1 tbs chives
- 2 1/2 cups seasoned croutons, crushed
Thinly slice the chicken breast and season with salt, pepper, and garlic.
Saute broccoli, spinach, and sun-dried tomatoes in olive oil.
Spread the mixture over the chicken breast and top with Feta cheese. Gently roll up chicken breast with broccoli, spinach and cheese mixture inside.
Cook at 350 degrees for 25-30 min (until chicken is done).
