Recipe Box: Reindeer Treats

Zoe’s Peanut Butter Biscuits

3 cups oats
1/3 cup honey
1 cup peanut butter (crunchy)
2 tsp. chicken stock demi-glace
1/3 cup warm water

Preheat conventional oven to 350° F.

Mix demi-glace with water. Grind 2 cups of the oats in a food processor. Mix all ingredients in a large mixing bowl. Turn dough out onto floured surface. Roll dough 1/4 inch thick, approximately the thickness of a magazine.

Use cookie cutters to cut out shapes carefully. Place on a parchment lined baking sheet. Bake until bottoms are golden brown, approximately 10 minutes. Place shapes on a cooling rack and cool completely before serving. Can be stored in an air-tight container.

Fresh Breath Twist

3 cups all-purpose flour
1/2 cup nonfat dry milk
1/2 tsp. baking powder
1/2 tsp. salt
2 Tbsp. fresh Italian (flat leaf) parsley
2 large eggs
1 cup warm water
1/4 tsp. peppermint oil flavoring
Scant two drops red food coloring (optional)

Preheat oven to 350˚

Mix together flour, milk, baking powder, salt, eggs, water, and parsley in a large bowl. Knead into dough. Split dough into two large pieces. Work peppermint oil (and red food coloring) into one of the large pieces of dough.

Divide each large piece of dough into 6 smaller balls of dough’s. Take each ball of dough and roll into a long snake. Twist together a plain snake and a peppermint snake dough together. Cut each snake into twists and press on the ends to keep together.

Bake for 10 to 15 minutes or until the bottoms turn golden brown on a parchment paper lined baking sheet. Remove from oven, let cool thoroughly, and store in an airtight container. Treats can be kept frozen for up to four months (thaw before serving).
