AJ's Pasta-Free Fagioli

3-4 cloves minced garlic
1 can petite cut tomatoes
1 can cannellini beans
chopped parsley
1 cup spinach
salt, pepper, red pepper
2 tbsp. extra virgin olive oil (EVOO)
1/3 cup white wine


-Sautee minced garlic in EVOO until golden brown
-Add tomatoes, rinse beans with 1/2 can of water and add to sauce
-Add salt, pepper, red pepper, white wine
-Bring to a boil
-Add chopped parsley, cannellini beans and spinach
-Simmer on medium for 10 - 15 minutes
