Fox 8 Recipe Box: Brown Sugar Glazed Salmon

Brown Sugar Glaze
- 1 oz. unsalted butter
- 1/2 lb. minced onions
- 1 t. minced ginger
- 1/2 T. chopped fresh thyme
- 1 T soy sauce
- 1 oz. orange juice
- 1/2 lb. brown sugar
In a sauce pan sweat onions and ginger in butter until onions are translucent. Do not brown. Lower the heat to low; add the fresh thyme and stir until you can smell the thyme. Add the soy sauce and orange juice. Add the brown sugar and using a rubber spatula stir until the brown sugar is melted and incorporated, do not boil. Scrape into a 1/6th pan and cool to room temperature.
Smashed Sweet Potatoes
- 1 3/4 lbs. sweet potatoes, washed skin on
- 1/8 lb. unsalted butter cubed
- 1 t. salt and pepper mix
- 1/3 t. ground cinnamon
Place washed sweet potatoes on a sheet tray and roast in a 350 degree oven for 40-45 minutes, until fork tender. Remove from oven and let cool for 2-3 minutes. Being very careful remove the skins from the sweet potatoes and place in a bowl with the butter and seasonings. Place cubed butter, salt and pepper mix, and cinnamon in a bowl. Top with the peeled sweet potatoes and using a wire whisk; smash the potatoes while incorporating the butter and seasonings. Serve immediately.
