Fox 8 Recipe Box: Zucchini Crisp

Filling:

8 cups peeled zucchini, seeds removed and thinly sliced 1/2 cup fresh lemon juice

3/4 cup white sugar

1 tsp ground cinnamon

1/4 tsp ground nutmeg

Cook these first five ingredients, stirring often, until tender; about 30 minutes.

Crust:

2 cups flour

1/3 cup cold butter, cut into small pieces 1 cup white sugar

1 cup oats

pinch of salt

1 tsp ground cinnamon

1/3 cup buttermilk

Directions:

In a large bowl combine flour and butter with a pastry blender until the bits of butter are very small.  Add sugar, oats, salt, and cinnamon.  Combine well.  Add the buttermilk by sprinkling over the top and rubbing in with  your fingers.  The mixture should be crumbly.

Pat 1 11/2 cups of this mixture into the bottom of a sprayed 9 x 13 pan.  Place in preheated 375 degree oven for 10 minutes.  Add 1/3 cup of crumb mixture to cooked zucchini mixture and  mix well.  Remove crust from oven and spread zucchini mixture on top.  Sprinkle remaining crumbs on top and bake another 30 minutes.
