Fox 8 Recipe Box: Peach Delight
The Miller Haus Peach Delight
Crust:
1-1/4 c. all-purpose flour
½ c. butter, softened
1/3 c. brown sugar
1/3 c. roasted & salted pecans, chopped
1 t. vanilla
Filling:
8oz. cream cheese, softened
1 c. sifted powdered sugar
8oz. Cool Whip, thawed
Fruit topping:
1 c. water
1 c. 7-up
½ c. granulated sugar
1/4 c. clear jel
1-1/2 t. lemon juice
pinch of salt
1- 3oz. box peach Jell-o (or 1/2 c. bulk)
8-10 Peaches (amount of peaches depends on how thick of a fruit layer)
*Note: recipe for glaze topping can be cut in half. I usually make a full batch & have some on hand to toss with fresh fruit later. Stores well in the refrigerator.
Crust:
Combine crust ingredients. Mixture will resemble soft crumbs. Gently cover the bottom of a lightly greased 12” or 13”x9” baking dish. DO NOT press crumb mixture firmly into pan. Bake at 350 for 14-16 minutes or until golden brown. Remove from oven and cool.
Filling:
Beat softened cream cheese until fluffy. Measure 1 cup of powdered sugar then sift. Sifting isn’t required but insures lump free filling. Gradually add powdered sugar to cream cheese. Gently stir in Cool Whip. Spread on cooled crust.
Fruit topping:
Dissolve clear jel in water. Add 7-up, sugar, lemon juice and the pinch of salt. Bring to a boil over medium heat, stirring constantly until thick, shiny and almost clear. Remove from heat and add the small box of peach jello. Cool and then combine with sliced, fresh peaches. *Note: can use strawberries & strawberry jello instead of peaches. This is a terrific seasonal dessert!
