Grilled Walleye

Station:          Broil-Grill

Yield:              1 Serving

Tools:             Rectangle plate, metal spatula, measuring spoons & scoop (#70), tongs

Step 1 Walleye filet, bones removed

Step 2 Smashed redskin potatoes

Step 3 Shallot butter

  Lemon wedge, quartered

Process

Step 1 Brush walleye with blended olive oil, then season with salt & pepper mix.  Grill to desired doneness with perfect diamond marks, see picture.
Step 2 Place smashed potatoes on left side of a warm rectangle plate, market vegetables on right.  Top veg with fish.
Step 3 Top walleye with shallot butter (flash very quickly to start to melt butter) and garnish plate with lemon wedge (between the starch and veg at back of plate).
