Recipe: Fried Green Tomatoes

Ingredients:
- 4-6 medium sized green tomatoes
- 15 pieces of ice
- 2 cups Fry Krisp batter or 2 cups flour
- 2 cups cornmeal
- dash lemon pepper
- 1 tsp onion powder
- dash salt
- dash hot cayenne pepper
- soybean oil or canola oil as needed
Directions:
Cut washed green tomatoes into thick slices, at least 1/2 inch thick.
Put ice on top of the tomatoes after you slice them to keep the tomatoes moist but not wet until you cook them.
In a large bowl, mix flour, cornmeal, salt, all of the pepper seasonings, and onion powder.
Coat the tomato slices with the dry ingredients, coating both sides thoroughly.
Place on waxed paper until ready to fry.
In a deep saute pan, add 1-2 inches of oil and begin warming over medium to high heat.
To test the oil, sprinkle some flour over the oil. If it sizzles it is ready to start frying the tomato slices.
Carefully add the tomato slices into the oil but don’t overcrowd the slices.
Cook 3-5 minutes on both sides until golden brown.
To avoid giving your tomatoes a burnt taste, make sure to clean out excess flour with a slotted spoon between batches.
Move the fried tomatoes onto a paper towl to remove excess oil, then eat happily.
