Father’s Day Breakfast: Omelet and Strawberry Pancakes
*Father’s Day Breakfast: Turkey Sausage and Pepper Omelet with Strawberry Pancakes*

1 package Jimmy Dean Turkey Crumbles
1 package pre-cut mixed peppers (sold in fresh vegetable department)
2 eggs (per omelet)
4 tbsp water
1 cup shredded cheddar cheese
Pam cooking spray
For omelets – scramble eggs and water in a small bowl and set aside. In a medium-sized, non-stick skillet, cook peppers and sausage until warmed through. Pour mixture in a bowl and set aside. Spray skillet with Pam making sure to coat all sides. Pour eggs into skillet and cover. Cook over medium heat until the eggs solidify. Sprinkle cheese and sausage mixture on one half of the omelet. Using a spatula, flip the empty side of the omelet over on top of the cheese and sausage side. Top with cheddar cheese and garnish with parsley flakes.
Strawberry Pancakes Ingredients:
2 cups pancake batter
10 fresh strawberries (rinsed and dried)
Strawberry Pancake Directions:
Prepare pancake batter per instructions on the box. Chop and fold into batter all but 3 strawberries. Coat a heated skillet with canola oil. With a ladle, spoon batter into skillet. When pancakes begin to bubble they are ready to be flipped over. Once cooked on both sides, plate and top with butter and remaining chopped strawberries. Use the final strawberry for garnish (if desired).
