Corn on the Cob
Microwave Corn on the Cob
Ingredients:
- 6 ears husks and silk removed
- 2 tbs butter
- ½ tsp salt
- ¼ tsp black pepper
- 1 gallon zip lock bag (plastic bag)
Rub corn with softened butter. Season with salt and pepper.
Place corn in bag and zip shut. If using a plain plastic bag, tie top in knot.
Place bag in microwave and cook on high for 8 minutes. Corn will stay hot and ready to eat for 15 to 20 minutes.
Boiled Corn on the Cob
Ingredients:
- 6 ears husks and silk removed
- 2 tbs sugar
- 4 capfuls of white vinegar
- 2 tbs of butter for dressing
- salt to taste
Bring a large pot of water to the boil. Add sugar and vinegar. Add corn to boiling water. When water returns to boil, turn off heat and cover. Corn will be ready to serve in 10-12 minutes. Corn will stay warm in water for up to 30 minutes.
Grilled Corn on the Cob
This can be done in the husks or husked and wrapped in foil. I prefer wrapped in foil because the mess is removed long before the corn is served. If you decide to cook it in the husks, soak in water at least an hour or overnight. Shake off excess water and place on medium hot grill. Cook for about 20 minutes turning frequently.
I prefer husking and seasoning the corn, wrapping in foil, then cooking over medium high heat for about 15 minutes.
Seasoning can include , butter, herbs of choice, and of course, salt and pepper.
Mexican Style Corn on the Cob
Ingredients:
- 6 ears of corn, husks pulled back, and silk removed
- ½ c. melted butter
- ½ c. mayo
- ½ cup Romano cheese grated (cotija cheese is used in Mexico)
- 1 lime cut into wedges
- Mexican seasoning to taste
Grill corn over medium high heat. Grill about 10 minutes turning frequently. Brush with butter, smear with mayo, and sprinkle with grated cheese. Dust with a little Mexican seasoning and serve.
Flavored Butter Toppings for Corn on the Cob
Melt 1 stick of butter(1/4 lb)
To this you can add any combination of herbs and garlic you like.
Example: 1 clove of minced garlic and a tsp of thyme.
Or:
I tsp of chopped dill
Or:
1 tsp chopped cilantro with the juice of half a lime.
Or:
Substitute olive oil for the butter. This would make a nice base for chopped basil. A pesto sauce would be delicious.
Or:
If it’s spicy you like, combine hot sauces or Mexican seasonings with butter or oil.
