Tropical Pork Chops
ORANGE JALAPENO MARMALADE PORK CHOPS
- 5 pork chops
- 1 onion chopped
- 2cloves garlic chopped
- 2 jalapeno’s chopped
- 3 bell pepper Julianne
- ½ cup white wine
- 10 oz orange marmalade
- 1cup BBQ sauce
- ¼ cup sweetened lime juice
- 2T butter
- 1 T red pepper flake
- salt and pepper to taste
Brown the pork chops in a pan on both sides in same pan add onion, garlic, bell peppers and sauté until soft. Deglaze the pan with the white wine and reduce add jalapenos orange marmalade, BBQ sauce, butter and seasonings. Put chops and sauce in oven proof pan and bake till chops are fork tender depends on thickness of chops. 1hr to 1 ½ hrs.
COCONUT STAR FRUIT RICE
- 2 cups long grain rice
- 4 cups of coconut water
- ½ cup chopped coconut
- 1 star fruit chopped
- 2T butter
- 1t salt
- ½ t white pepper
Put all ingredients in a pot bring to a boil lower heat to low, cover for fifteen minutes then remove from heat and enjoy.
